Wiener schnitzel, sometimes spelled Wienerschnitzel, as in Switzerland, is a type of schnitzel made of a thin, breaded, pan-fried veal cutlet. It is one of the best known specialities of Viennese cuisine, and one of the national dishes of Austria. The designation Wiener Schnitzel first appeared in the 19th century, with the first known mention in a cookbook from 1831.

The designation Wiener Schnitzel first appeared in the 19th century, with the first known mention in a cookbook from 1831. In the popular southern German cookbook by Katharina Prato, it was mentioned as eingebröselte Kalbsschnitzchen (roughly translated: crusted veal cutlets ). Whereas the original Austrian Wiener schnitzel only includes lemon and parsley as garnishes, in the Nordic countries it is typically also garnished with a slice of anchovy and capers. The dish is prepared from veal slices, butterfly cut, about 4 millimetres (. 6 in) thin and lightly pounded flat, slightly salted, and rolled in flour, whipped eggs and bread crumbs.

For original Wiener Schnitzel, the cooks at Figlmüller use tender, juicy veal roast-a particularly succulent piece of meat from the rear of the veal, which is then tenderized with a healthy portion of love, and a large mallet. Our cooks then also show off their finesse when coating the meat, as too much pressure wets the crumbs and prevents them from rising while cooking. However, at Figlmüller we do break from tradition: to ensure the subtle natural flavor of the meat is not overpowered, we fry our Wiener Schnitzel in a mixture of vegetable oil and clarified butter

Although the restaurant boasts an ever-changing menu, the wiener schnitzel has remained a constant and reliable dish. Favouring the veal variety, it is succulent, expertly seasoned and served with the conventional Viennese companions of potato salad and greens.
