KAI WINDING, whose trombone duo with . Johnson, ''Jay and Kai,'' broke up 25 years ago, has, after a quarter of a century, taken a new trombone-playing partner, Curtis Fuller. Their quintet, called ''Giant Bones,'' is making its first New York jazz-club appearance this week, through Sunday, at the Blue Note, 131 West Third Street.

The album Jay & Kai + 6 (1956) featured a trombone octet and the trombonium. He composed and arranged many of the works he and Johnson recorded. During the 1960s, Winding began an association with Verve Records and producer Creed Taylor. Winding experimented with ensembles again, recorded solo albums, and one album of country music with the Anita Kerr Singers. He followed Creed Taylor to A&M/CTI and made more albums with J. J. While at Verve, Winding further experimented with various ensembles, made solo albums, and even an album of country music with the Anita Kerr Singers. In the late 1960s, Winding followed Creed Taylor to his new recording label at A&M/CTI and made at least two more albums with Johnson. In the 1970s and early 1980s, Winding recorded for a number of independent record labels. During this time, he continued to give clinics, play jazz concerts and even reunited with Johnson for a live concert in Japan.
